Our Ice Cream Story – Gigi & Pops’ Scoop Shop

For over 10 years, we ran a successful cleaning business right here in Knoxville, Tennessee, while also blending our family of nine into one big, hilarious adventure full of struggles and joy. Life was busy, beautiful, and a little chaotic.

A New Chapter

In January 2025, everything changed when our first grandchild, Holland Elle, was born. That’s when we officially became Gigi and Pops. With our nest nearly empty, we knew it was time for something new— something that would let us connect with our community in a face-to-face, joyful way.

Why Ice Cream?

Both of us have experience in the food industry, so naturally, the idea of a Knoxville food truck came to mind. But not just any food truck—an ice cream truck. Because honestly, who doesn’t love ice cream? It’s timeless, it’s nostalgic, and it has a way of bringing smiles to every generation.

We started dreaming. And since our grandparent names had already changed to Gigi and Pops, it felt only right to let that be part of our next chapter. That’s how Gigi & Pops’ Scoop Shop was born.

Our Mission

We wanted to create something different for Knoxville. Not just an ice cream truck, but a safe, friendly, and family-owned ice cream experience that wouldn’t break the bank. Because let’s be real—who wants to pay $5 for a frostbitten fudge pop? Not this Gigi!
